How would you rate your skill level in the kitchen?  While I consider myself to be proficient overall, there are still tons of things I'd like to perfect, especially when it comes to baking.  Nielsen-Massey's Better Your Bake tip series is a great educational tool, walking you through various techniques and then giving a selection of recipes to choose from to test out what you've learned.

The first tip is how to separate eggs and how to properly whisk eggs.  The recipe I chose to showcase my whisking technique is the Honey Vanilla Pancakes. Look how light and fluffy they turned out!  I used the Ugandan Pure Vanilla Extract, and served them with blueberries from our new bushes.

Tip #2 focuses on how to brown butter, and the Browned Butter Cereal Treats are calling my name.  Browned butter is amazing in both sweet and savory applications, giving food a "nutty" flavor.

Tip #3 is how to roll out cookie dough.  That's something that I've always struggled with, and I'm looking forward to practicing and then making the Berry Swirl Ice Cream Sandwiches.

Nielsen-Massey would love to see your creations, and so would I!  Share pics using #BetterYourBake on Instagram, and be sure to follow the hashtag to see what others are making!

Honey Vanilla Pancakes

Author: Jolene's Recipe Journal

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup honey
  • 2 eggs
  • 1 1/2 cups buttermilk
  • 2 tablespoons melted butter, plus more for buttering the skillet and topping the pancakes
  • 1 teaspoon Nielsen-Massey Ugandan Pure Vanilla Extract

How to cook Honey Vanilla Pancakes

  1. In a large bowl, add flour, baking powder, baking soda and salt; whisk to combine.
  2. In a small bowl, whisk two eggs until the yolks and whites are blended.
  3. In a separate, small microwave-safe bowl, add honey and heat in the microwave for 15-20 seconds. Add the whisked eggs, honey, buttermilk, melted butter and Nielsen-Massey Pure Vanilla Extract; whisk to combine. Using a rubber spatula, gently fold the wet ingredients into the flour mixture until just combined.
  4. Preheat a skillet or pancake griddle over medium heat. Coat with 1/2 tablespoon of butter and let it melt for a minute or two. Use a ladle or measuring cup to scoop about ¼ cup of batter into the pan. For larger pancakes, ladle 1/2 cup. Cook 2-3 minutes on each side, or until each side is golden brown. Lower the heat if necessary. Repeat this step with the rest of the batter and add more butter as needed to coat the pan.
  5. Garnish with your favorite toppings. Enjoy!
Whisking the eggs prior to incorporating with your other wet ingredients ensures the eggs will mix evenly with the dry ingredients. Learn how to properly whisk eggs here

authorHello, my name is Cherine, but you can call me "Chicho" :) I am Lebanese and I live in Paris. Welcome to my internet kitchen, grab a cup of coffee, a macaron and get comfy! This blog is my recipe journal. It's where I write about the recipes that intersect my everyday life. Often the recipes are from my cookbook collection, my magazines, my favorite blogs... sometimes not, they might come from my mother, a friend, a neighbour... or I might write about a recipe I invented myself.
